Poached Eggs

Ingredients:

• 2 slices low-fat mozzarella



• 2 eggs



• 1 bell pepper, tops cut off and halved



• 2/3 cup mayonnaise



• 3 tbs orange juice



• 1 ½ tsp mustard



• 1/2 tsp lemon juice



• half of tsp vinegar



• half of tsp turmeric powder



• 1 cup water


STEPS:

• Crack the eggs in bell pepper cups & pinnacle each with a mozzarella slice.



• Add the water on your mini-on the spot pot, upload steamer basket, add bell pepper cups, cover & prepare dinner on Low for 4 mins.

In a bowl, blend the mayonnaise with the orange juice, mustard, lemon juice, vinegar & turmeric and whisk well.



• Divide the poaches eggs between plates, unfold the sauce you’ve made throughout and serve.
