Delicious Egg Risotto

Ingredients:

• 2 slices bacon, low-sodium and chopped



• 1 cup white rice



• 1/3 cup yellow onion, chopped

3/4 cups low-sodium fowl stock



• 2 eggs, fried



• 2 tablespoons low-fats parmesan, grated



• 1/2 tablespoon chives, chopped



• A pinch of black pepper


STEPS:

• Set your mini-instant pot on sauté mode, add bacon, stir and cook dinner for 2-3 minutes.



• Add the onion, stir & cook for 2 minutes more.



• Add rice, stock, black pepper & parmesan, cover & prepare dinner on High for 7 mins more.



• Divide the risotto between plates, pinnacle with the eggs, sprinkle chives on top & serve for breakfast.
